Tuesday Night

As always...cook once and eat twice!

Quick Tip: Pineapple and bell peppers are sources of fibre, vitamins and minerals, and lean pork contains iron, B vitamins and zinc.

Ingredients

  • 1 — 14 oz (398 ml) can pineapple chunks
  • 1 Tbsp (15 ml) Epicure’s Cuban Seasoning
  • 4 — 4 oz (125 g) pork loin chops
  • 1 Tbsp (15 ml) vegetable oil
  • 1 red bell pepper, sliced
  • Epicure’s Sea Salt, to taste
  • Epicure’s Black Pepper, to taste

Instructions

1. Drain pineapple, reserving juice. Whisk approximately 1/4 cup (60 ml) pineapple juice with Cuban Seasoning and rub onto all sides of pork. Refrigerate for at least 30 minutes.
2. Heat Epicure's Eclipse® Coated Professional Frying Pan to medium-high. Add oil and pork chops. Brown pork on one side, turn over, add pepper and cook for approximately 3 minutes, stirring regularly.
3. Add pineapple, remaining juice and Sea Salt and Black Pepper. Simmer until pork is fully cooked and juice is reduced to a syrupy glaze.
4. Serve warm over steamed rice or with potatoes and vegetable. Serve with a green leaf salad.

Monday Night

Remember to cook once but eat twice. Make enough to have for lunch on Tuesday!

Ingredients

  • 4 skinless chicken legs
  • Epicure’s Sea Salt, to taste
  • Epicure’s Black Pepper, to taste
  • 2 tsp (10 ml) vegetable oil
  • 1 cup (250 ml) brown rice
  • 1 Tbsp (15 ml) Epicure’s Taco Seasoning
  • 1 cup (250 ml) water
  • 1 cup (250 ml) Epicure’s Chicken Bouillon, prepared
  • 1 cup (250 ml) Epicure’s Salsa , prepared — optional
Instructions
1. Season chicken with Sea Salt and Pepper. Heat a large Epicure's Eclipse® Coated Professional Frying Pan to medium-high. Add oil and brown chicken on both sides.
2. Add rice and Taco Seasoning. Stir often and lightly toast rice for 2–3 minutes. Add water and Chicken Bouillon, stir and bring to a gentle boil.
3. Reduce heat to medium-low, cover and simmer for 30–40 minutes, or until rice is tender and chicken is fully cooked. Spoon rice onto plates and place chicken on top. Dish up with spoonfuls of prepared Epicure's Salsa, if desired.

What to serve for dinner?

My journey of cooking began when I found out my son was allergic to food colouring. I had always enjoyed cooking but now I realize I was not really cooking...I was preparing meals but not really cooking! We now enjoy great...fresh meals...that are easy to prepare and healthy. Enjoy!
